Super easy roasted Brussels sprouts are one of my favorites. They only take about 5 min of prep and then cook for 40 min, with some attention needed at halfway point.
These little guys are nutritious, flavorful and will keep you feeling satisfied for hours!
What you’ll need:
2 pounds of Brussels sprouts, trimmed and halved
3 tbsp avacodo or olive oil
Gigi’s Joy (or seasoning blend of choice)
Sea salt (Optional)
How to cook:
1. Preheat oven to 425. In large glass casserole dish or baking pan, drizzle sprouts with oil and season with Gigi’s Joy (or seasoning blend of choice). Toss until combined.
2. Cover with foil and cook 20 min.
3. Remove foil, shake and continue cooking until sprouts are crispy on the outside and tender in the middle, about 20 minutes. The Brussels sprouts should be brown and crispy but not burnt.
4. Sprinkle with sea salt, if desired, and enjoy!
These are delicious reheated or cold, have about 45 calories per cup and are rich in vitamin C.
