This is so so easy and absolutely yummy! I like to make these for football parties too! To jazz it up I garnish with chives and blue cheese crumbles or drizzle with ranch.  It’s always a hit. Better yet it’s a great make head meal for meal prep.
Prep time: 15 min    Cook time: 25-30min   Oven temp 400 degrees    Serves 4 people
What you need:
2 bell peppers
1 small onion
2 cup shredded chicken depending on size of peppers
1/2 cup hot sauce (I use Franks Red Hot Sauce)
Shredded cheese (I use whatever I have on hand)
2 garlic cloves minced
3 tbs butter
salt and pepper
Time to prepare a tasty meal!
1. Cut peppers in half and remove seeds
2. Blanch peppers so the cook easier later. To do this simply place in boiling water for 2-5 min. Place in casserole dish a s set aside.
3. In large skillet melt butter, add onion and sauté until tender. Add garlic and cook about 2 more min until garlic is fragrant.
4. Add shredded chicken and hot sauce, thoroughly mix and simmer 2-3 min. Then remove from heat.
5. Divide mixture between bell pepper halves.
6. Top with shredded cheese.
7. Cover with foil and place in refrigerator or cook immediately, uncovered, for a fantastic dinner.
8. When you’re ready to cook simply preheat oven to 400 and cook for 25 min.
I generally cover with foil and write what it is along with heating instructions, just incase someone needs direction 😀
Serve with bone broth rice or a garden salad
