This roast chicken is so delicious, even my chicken hating husband loves it! He must have eaten a lot of  dry chicken back in the day, because the man used to stick his nose up and swear he hated the stuff.  Until he tasted my delicious roast chicken. Now he can’t get enough of it!!!
People often say, don’t y’all get tired of eating chicken?  I mean sometimes a girl just needs a steak, right?! But…we can dress chicken up so many ways it never feels like we’re eating chicken all the time. Organic chicken [antibiotic, hormone and pesticide free] is one of the healthiest proteins, 3 ounces of chicken breast has 25 grams of protein and only 7 grams of fat! Not to mention it’s easy to find and inexpensive. It’s no wonder we include chicken in most of our meal prep recipes.
Prep time for this amazing dish is only 10 min! 10 min of prep and you easily get 12 servings of versatile chicken. That’s 6 meals for my husband and I. 3 meals for a family of 4! One organic chicken costs around $8, about $4 for the other ingredients and bam…that’s $2-$4 per meal! Are you starting to see why we love chicken?! Especially this delicious roast chicken recipe!
Alright, let’s get cookin’
Total cook time 1-1 1/2 hours depending on size of chicken. 1 hour for 2-3 pounds and 1 1/2 for 4-6 pounds. 4-6 pounds gets you the desired 12 servings.
You’ll know it’s done when the drippings are clear, the internal temperature is 165 degrees and it smells amazing! Always check to make sure it’s fully cooked before eating. It will literally fall off the bones.
Here is what you’ll need:
1 whole chicken
salt and pepper
Poultry blend of herbs; sprigs of rosemary, sage and thyme. You can grow these yourself or purchase at any grocery store. Some actually carry a blend of these specific herbs…Poultry Medly
1/2 a lemon
1 head of garlic peeled
1/4 stick of butter melted
1 onion cut into thick chunks
4 carrots cut in chunks
3 stalks of celery cut in chunks
olive oil
Easy steps to making a delicious roast chicken:
preheat oven to 425 degrees
1. Rinse the chicken inside and out, removing gizzards if necessary.  I often set these aside for bone broth. Sometimes my husband likes to fry them in the air fryer…I’m not really a fan so most of the time I feed them to my dogs.
2. Liberally salt and pepper inside of chicken
3. Stuff with garlic,  half your herbs and the lemon half
4. Brush outside of chicken with melted butter
5. Liberally salt and pepper outside of chicken
6. Place in roasting pan and surround it with carrots, celery and onions (you can add any vegetable, I sometimes add potatoes)
7. Toss remaining herbs in a little olive oil and place on top of vegetables and chicken
You are ready to cook!
When the chicken is fully cooked remove from oven and let it rest for 10 minutes. This is the hardest part because it smells soooooo good!
